Hi, Back in the late 60's, AMT released some special editions of the 25 Ford Model T kit with some added parts to make two versions of a C-cab. One was called the Fruit Wagon - it had an open back and a rack for fruit. The other one was called the Cop Out - it was basically a stock closed back C-cab. The cover is pictured below. Would a rod built with this C-cab be TRaKable?

They can be. The main thing to stay away from is the jail bars and some other features added to some of them kits. In order to be a traditional rod, it's not easy but can be done. I have yet to see one that totally stood out as trad....but give it a shot!

Thanks Bob, I think I am up to the challenge. I don't want one of the cartoony things.
I talked to Norm Veber at Replica's and Miniatures and he used to carry the parts for both the Fruit Wagon and the Cop Out and he still has the molds. He is selling me the parts I need for the standard C-cab (the paddy wagon version) for $20. If anyone here is interested in seeing those parts back in his catalog, just let him know.
I am thinking about a basic T rod with a OHV V8 or maybe a flattie, artillery wheels, street tires (no slicks).

street tires are one step in the right direction! I love slicks on hot rods, but your project is already steering towards the show rod side...so any small things you can do to keep it on the hot rod side....you can do this.
